milk chocolate chips ice cream

i can only eat congee, bread, biscuit and "ice cream" suprisingly. it helps to relief my pain.

so i made myself milk chocolate chips ice cream when i feel a bit better.

oatmeal chocolate cookies

20 pieces

unsalted butter 90g
black sugar 30g
sugar 30g
egg 1
plain flour 140g
baking powder 1/2 tsp
baking soda 1/4 tsp
oatmeal 30g
72% chocolate 50g

steps for mixture in order:

unsaltd butter > black sugar + sugar > egg > flour + baking soda + baking powder > oatmeal > chocolate

180 degree c 15 mins

lazy bun

i call it lazy bun since i only let them rise for one time

12 mini lazy bun with approx 48g each

recipe (all in g)

bread flour 279
cake flour 69.9
salt 6.6
butter 10.2
instand yeast 6.6
water 226.8

1. mix everything except butter until dough is smooth

2. add butter. knead until dough can be stretched thinkly without breaking

3. let it rise for 30-60 mins

4. divide dough and let it stand for 5-10 mins

5. shaping

6. spray water on the surface and add peppy seeds

7. rest 5 mins

8. 200 degree c for 25 mins

homemade green tea ice cream

For 1L green tea ice cream maker

A: green tea: 2.5 tbsp + sugar 1.5tbsp

B: milk: 300g + whipping cream 150g

C: egg white 3 pieces + sugar 105g

1. mix B and then add A, sifted and chill for 2-3 hours
2. beat C until foamy
3. mix C with 1
4. pour into the ice cream maker and keep stiring for 20 mins or 30 mins
