自製冰皮月餅

after reading the 飲食男女 about making snow moon cake
i went to shanghai street to buy everything.

做冰皮月餅，比做西餅蛋糕更容易，只是三個步驟：搓皮、包餡、壓模，便大功告成，就算第一次做都能一學就會。準備好材料工具，立即動手做吧！

step 1︰搓皮
利用現成冰皮預伴粉，加入熱滾水，搓混，不用蒸就做好了，而且口感軟柔煙韌。
想做不同顏色、味道，搓粉時加入各種味道的食用香油，甚或綠茶粉、朱古力粉等，雪白餅皮即變成五顏六色。

開預伴粉，一定要用剛煲滾的熱水，否則不夠煙韌。

step 2︰包月餅餡
冰皮月餅餡料口味愈出愈多，除了一般傳統的綠豆蓉、奶黃、朱古力，還有日式櫻花口味、酒味，加入果肉的水果味道，入口不太甜，很幼滑，味道很不錯。
去烘焙店便可找到不同月餅餡料，直接包在冰皮餅皮內即可。喜歡的話，也可發揮創意，在現成餡料中加入果肉、花生、棉花糖、朱古力等 mix& match，配搭出獨一無二的月餅口味。

餡料不能太軟身，否則壓模時，月餅圖案不清楚甚或爆裂；也不要加入過多硬身餡料，會影響口感。

一般細包裝月餅餡料有 300g，可做 12個迷你 size冰皮月餅，價錢約$15-$42。

想做軟心餡的冰皮月餅，包餡料時要注意，把軟心材料先包在豆蓉中間，再包餅皮才夠穩陣。

柚子餡、奶黃餡加士多啤梨、綠茶餡配紅豆醬，還有朱古力混花生粒、棉花糖，都是可自家配搭的冰皮月餅餡。

step 3︰壓模
餅皮包好餡料，就可壓成月餅，所用的工具，當然不是傳統木製餅模，而是這種新式塑膠月餅模，似郵局印章一樣，很易用。有圓有方，有不同尺寸及圖案款式選擇。

只要把餅模套在粉糰上，按下手柄，便壓好不同圖案的冰皮月餅，想更換圖案，把圖案膠片拆下更換即可，方便亦省錢。

揀月餅模，除了揀喜歡的圖案，亦要留意坑紋是否夠深，否則壓出來的月餅圖案不夠清晰明顯。

粉糰跟餅模 size要配合，壓出來的月餅才會平均。
